When purchasing tofu, I prefer to buy the tofu in water. You will need to press firm or medium firm tofu in order to drain the excess water. Just lay a paper towel under and on top and then cover with a heavy book. Leave it for at least 15 minutes, and it should be workable. If you are interested in smoothies, you will simply use soft tofu and not need to press it. For stir fries, use extra firm and press and drain it much longer. Cut it into cubes before throwing it into the pan. Consider also marinating the tofu prior to cooking it - tofu is like a sponge and soaks up flavor.
